Grand Marnier Cranberry Relish

4 cups cranberries
2 cups sugar
1 whole orange
5 Tablespoons Grand Marnier (Can use other orange liqueur)

* Blend all together in food processor or blender until smooth.  Refrigerate.  Good with all meats.

Whole Cooked Cranberry Sauce

2 cups sugar
2 cups water
4 cups whole cranberries

Boil sugar and water.  Add cranberries.  Cook about ten minutes after berries start to pop.  Can put in molds.  Cool and refrigerate.  Enjoy!

Di's Sourdough and Wild Mushroom Stuffing

2 loaves of sour dough bread torn into bite sized pieces

Saute in butter and then add to above;

Chantrelles or King Boletes mushrooms
chopped onion
chopped garlic
chopped celery
chopped giblets ( I don't like the liver but if you do add it)
parsley
sage, dry or chopped fresh
S & P to taste

Use broth made from chopped giblets to moisten stuffing.



Simply the Best Brine

1 cup salt
1 cup sugar (can use brown or white)
Garlic, onion, herbs as desired and optional

Dissolve in a gallon of water. Add turkey.  ( I needed a double batch to cover our 22# bird.)  Keep refrigerated for 24 to 48 hrs.  Smoke with wood chips until done (165 degrees).  Yum!
